Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsweetened applesauce
- 1/4 cup pure maple syrup
- 2 large eggs
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups peeled and chopped apples (about 2 medium apples)
- Optional: 1/2 cup chopped walnuts or pecans for some crunch
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, and nutmeg. Give it a good mix to ensure everything is evenly distributed.
- In another bowl, whisk together the applesauce, maple syrup, eggs, vegetable oil, and vanilla extract. This mixture should be smooth and well-combined.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Fold in the chopped apples and nuts (if using), ensuring they’re evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for about 55-60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown, and the kitchen should smell heavenly!
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. This step is the hardest—waiting to slice into it!
