- 1 cup canned pumpkin puree
- 1/2 cup maple syrup
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup chopped pecans
If you’re missing some ingredients, no worries! You can swap the pecans for walnuts or even chocolate chips for a different twist. And if you’re out of maple syrup, honey can be a sweet stand-in.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, combine the melted butter, pumpkin puree, maple syrup, and brown sugar, stirring until smooth.
- Add the eggs and vanilla extract to the wet ingredients, mixing until fully incorporated.
- Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the bread tough.
- Fold in the chopped pecans, ensuring they’re evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
