- 1/2 cup vegetable oil
- 1/2 cup maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1/2 cup brown sugar
Feel free to substitute the pecans with walnuts if that’s what you have on hand. And if you’re feeling adventurous, a dash of ginger could add a lovely zing.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a large bowl, combine the pumpkin puree, vegetable oil, maple syrup, eggs, and vanilla extract. Mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix—remember, perfection isn’t the goal here!
- Fold in the chopped pecans and brown sugar, spreading the mixture evenly into the prepared pan.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
