- 1 large cucumber, sliced into rounds
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1/2 cup kalamata olives
- 4 oz feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 4 whole wheat pita breads, cut into wedges
- Fresh parsley for garnish
- Optional: roasted red peppers, artichoke hearts, or marinated mushrooms
Instructions
- Start by preparing your hummus. If you’re making it from scratch, blend chickpeas, tahini, lemon juice, garlic, and olive oil in a food processor until smooth. Otherwise, a good quality store-bought hummus works wonders.
- Arrange the hummus in the center of a large serving board or platter. Use the back of a spoon to create a swirl on top of the hummus for an appealing presentation.
- Drizzle the olive oil over the hummus and sprinkle with smoked paprika and oregano for added flavor.
- Surround the hummus with cucumber slices, cherry tomato halves, red and yellow bell pepper strips, and kalamata olives.
- Sprinkle the crumbled feta cheese over the veggies and olives for a touch of creaminess.
- Arrange the pita wedges around the edge of the platter for easy grabbing. A little tip from my kitchen: warm the pita briefly in the oven for enhanced flavor.
- Garnish with fresh parsley for a pop of color and freshness.
- Add any optional ingredients like roasted red peppers or artichoke hearts to personalize your platter.
