Mediterranean Magic: Mint and Feta Stuffed Flatbreads Delight

Learn how to make delicious Mediterranean Mint and Feta Stuffed Flatbreads. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

The beauty of these flatbreads lies in their simplicity. Here’s what you’ll need:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup warm water
  • 2 tablespoons olive oil
  • 1 1/2 cups crumbled feta cheese
  • 1/2 cup fresh mint leaves, chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon black pepper

If you’re running low on fresh mint, dried mint will do in a pinch—just use half the amount. And if feta isn’t your thing, ricotta or goat cheese are great alternatives that bring their own unique flair to the table.

Instructions

Let’s get cooking! Here’s how you can make these flatbreads right in your kitchen:

  1. In a large bowl, mix together the flour and salt. Slowly add the warm water and olive oil, mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
  2. Cover the dough with a damp cloth and let it rest for 20 minutes. This is when I usually take a quick break to catch up with my kids or sip on some tea, just like my dad used to do.
  3. In another bowl, combine the feta cheese, mint, garlic, lemon juice, and black pepper. Mix until well combined.
  4. Divide the dough into smaller balls, about the size of a ping pong ball. Roll each ball into a thin disc on a floured surface.
  5. Spoon a generous amount of the feta mixture onto one half of each disc. Fold over the dough to cover the filling and press the edges to seal.
  6. Heat a skillet over medium heat. Cook each flatbread for 3-4 minutes on each side, or until golden brown and cooked through.
  7. Serve warm and enjoy the smiles around your table!
