- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup quinoa, cooked
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, pitted and sliced
- Feta cheese, crumbled, for topping (optional)
- Fresh parsley, chopped, for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet. Season with oregano, paprika, salt, and pepper. Cook for 2-3 minutes on each side until shrimp are pink and opaque.
- Squeeze the juice of one lemon over the shrimp and give it a quick stir to coat the shrimp in the lemony goodness.
- Remove the skillet from heat and set aside.
- To assemble the bowls, start with a base of cooked quinoa. Top with the shrimp, diced cucumber, cherry tomatoes, red onion, and olives.
- If desired, sprinkle with crumbled feta cheese and garnish with fresh parsley.
- Serve immediately and enjoy the burst of Mediterranean flavors!
