- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1/2 cup ranch dressing
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- Chopped fresh parsley for garnish (optional)
If you’re out of mozzarella, feel free to substitute with cheddar or any mild cheese you have on hand. The beauty of home cooking lies in its flexibility, just like when my mom would concoct a meal from whatever was in the pantry.
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- In a small bowl, combine the mozzarella cheese, ranch dressing, and Parmesan cheese. Stir until well mixed.
- Using a sharp knife, carefully slice a pocket into each chicken breast. Be sure not to cut all the way through.
- Stuff each chicken breast with the cheese mixture, pressing the edges together to seal.
- Season the outside of the chicken with garlic powder, onion powder, salt, and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Brown the chicken on both sides, about 3-4 minutes per side.
- Transfer the chicken to the prepared baking dish. Bake in the oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
- Remove from the oven and let rest for a few minutes before serving. Garnish with fresh parsley if desired.
