- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil, divided
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup crumbled cotija cheese
- 2 tablespoons fresh lime juice
- 2 tablespoons chopped cilantro
- Salt and pepper to taste
- Optional: 1 jalapeño, finely chopped
Need to switch things up? No problem! You can substitute cotija cheese with feta if you like, or swap the shrimp for chicken if that’s what you have on hand. Remember, cooking is about flexibility and using what you have, just like my mom used to do with a can of tomatoes and a few spices.
Instructions
- Preheat your grill or stovetop pan to medium-high heat. If you’re using the oven method, preheat to 400°F.
- In a bowl, toss the shrimp with 1 tablespoon olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper. Set aside to marinate for about 10 minutes.
- Brush the corn with the remaining olive oil and season with salt and pepper. Place the corn on the grill or in your hot pan, turning every few minutes until charred evenly, about 10-12 minutes.
- While the corn is roasting, heat a separate pan over medium-high heat and add the shrimp. Cook until pink and opaque, about 2 minutes per side.
- In a small bowl, mix together the mayonnaise, lime juice, and half of the chopped cilantro.
- Once the corn is cool enough to handle, cut the kernels off the cob and mix them in a large bowl with the shrimp, the mayonnaise mixture, and the crumbled cotija cheese. Add the jalapeño if you’re using it.
- Garnish with the remaining cilantro and serve warm.
