  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup caramel sauce, plus extra for drizzling
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

For those looking to switch things up, you can substitute the graham cracker crumbs with chocolate cookie crumbs for a richer base. And if you’re a dark chocolate fan, feel free to swap out the semi-sweet chips for dark chocolate.

Instructions

  1. Preheat your oven to 325°F and line a muffin tin with paper liners.
  2. In a bowl, mix together the graham cracker crumbs, 2 tablespoons of sugar, and melted butter until well combined.
  3. Press about a tablespoon of the mixture into the bottom of each lined muffin cup to form the crust.
  4. Bake the crusts for about 5 minutes, then remove from the oven and let them cool.
  5. In a large bowl, beat the cream cheese and 1/2 cup of sugar until smooth and creamy.
  6. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  7. Pour a layer of caramel sauce over each crust, followed by the cream cheese mixture, filling each cup about 3/4 full.
  8. Bake for 18-20 minutes, or until the centers are set and don’t jiggle when shaken.
  9. While the cheesecakes are cooling, heat the chocolate chips and heavy cream in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  10. Top each cheesecake with a spoonful of chocolate ganache and a drizzle of caramel sauce.
  11. Refrigerate for at least 2 hours before serving to allow them to set.
