  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 6 breakfast sausage links
  • 3 large eggs, scrambled
  • 1/4 cup shredded cheddar cheese
  • Maple syrup or hot sauce, for serving

If you’re out of buttermilk, no worries! Mix 1 cup of milk with a tablespoon of lemon juice or vinegar, and let it sit for 5 minutes. Voilà, homemade buttermilk!

Instructions

  1. Preheat your waffle iron to medium-high heat. If you don’t have a waffle iron, you can use a skillet for pancake-style tacos.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Cook the sausage links in a skillet over medium heat until browned and cooked through, about 8-10 minutes. Set aside.
  5. Pour batter into the preheated waffle iron, using enough to just cover the grids. Cook until golden brown and crisp, about 3-5 minutes per batch.
  6. While the waffles are cooking, scramble the eggs in a non-stick pan over medium heat until just set. Add a touch of salt and pepper to taste.
  7. To assemble, place a sausage link on a mini waffle, top with scrambled eggs and a sprinkle of cheddar cheese. Fold the waffle like a taco.
  8. Serve with maple syrup for a sweet touch or hot sauce for a kick, depending on your mood!
