- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. These spices will infuse the cake with warmth and aroma.
- In another large bowl, beat together the granulated sugar, brown sugar, and eggs until light and fluffy. This will take about 3 minutes.
- Slowly add the oil and vanilla extract to the sugar mixture, beating until well combined.
