Ingredients
- 1 pound ground beef or turkey
- 1 cup fresh spinach, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 ounces mozzarella cheese, cut into small cubes
- 2 tablespoons olive oil
If youโre out of breadcrumbs, feel free to substitute with crushed crackers or even oats. For a dairy-free version, simply replace the mozzarella with your favorite dairy-free cheese.
Instructions
- Preheat your oven to 375ยฐF and line a baking sheet with parchment paper.
- In a large bowl, combine the ground meat, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, oregano, salt, and pepper. Mix until everything is well combined.
- Take a small amount of the meat mixture and flatten it in your hand. Place a cube of mozzarella in the center and gently wrap the meat around it, forming a ball. Repeat with the remaining mixture.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-6 minutes.
- Transfer the meatballs to the prepared baking sheet and bake in the oven for 10-12 minutes, or until cooked through.
- Let the meatballs cool for a few minutes before serving. Enjoy the gooey surprise inside!
One tip from my kitchen to yours: make sure the mozzarella cubes are well covered with the meat mixture to avoid any cheese leakage.
