  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onions and cook until translucent, about 5 minutes.
  4. Add garlic and mushrooms to the skillet. Sauté until the mushrooms are tender and golden brown, about 10 minutes. Stir in the spinach and cook until wilted. Season with salt, pepper, and thyme. Remove from heat.
  5. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened, about 5 minutes. Stir in Parmesan cheese and season with salt and pepper.
  6. To assemble, spread a small amount of béchamel sauce on the bottom of the prepared baking dish. Layer three lasagna noodles, followed by half of the mushroom-spinach mixture, and one-third of the béchamel sauce. Repeat layers.
  7. Top with remaining noodles, béchamel sauce, and sprinkle with mozzarella cheese.
  8. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes, or until cheese is bubbly and golden.
