To make this dish, you’ll need a few pantry staples and a couple of fresh ingredients. Here’s what you’ll need:
- 12 ounces of spaghetti
- 3 tablespoons of olive oil
- 4 cloves of garlic, thinly sliced
- 10 ounces of mushrooms, sliced (button or cremini work well)
- 1/2 teaspoon of red pepper flakes (adjust to taste)
- Salt and pepper to taste
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of grated Parmesan cheese (optional for serving)
If you’re out of fresh parsley, dried can work in a pinch. And for those who prefer a bit of a kick, feel free to up the red pepper flakes.
Instructions
Let’s get cooking! Follow these steps, and you’ll have a delicious meal on the table in no time:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté for about 1 minute until fragrant and just starting to turn golden.
- Add the sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.
- Stir in the red pepper flakes, salt, and pepper. Cook for another minute to let the flavors meld.
- Add the cooked spaghetti to the skillet. Toss everything together, adding some of the reserved pasta water a bit at a time to help create a silky sauce.
- Remove from heat and stir in the chopped parsley. Taste and adjust seasoning if necessary.
- Serve hot, topped with grated Parmesan cheese if desired.
One tip from my kitchen: if you’re in the mood for more veggies, toss in some spinach or cherry tomatoes when you add the mushrooms. It’s a great way to mix things up and sneak in some extra nutrients.
