- 1 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 1 1/2 cups cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup caramel sauce (store-bought or homemade)
- 1 cup chocolate chips
- 1/4 cup heavy cream
If you find yourself lacking graham crackers, crushed digestive biscuits make a great substitute. And if you’re out of caramel sauce, a quick blend of butter, brown sugar, and cream can whip up a homemade version in no time—simple, just like Mom used to make.
Instructions
- In a small bowl, combine the graham cracker crumbs and melted butter. Mix until evenly coated.
- Press the mixture into the bottom of a lined muffin tin to form the base. Set aside.
- In a large bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
- Fold in the caramel sauce until well combined.
- Spoon the cream cheese mixture over the graham cracker base, filling each cup to about 3/4 full. Chill in the refrigerator while you prepare the chocolate topping.
- In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Pour the melted chocolate over the cheesecake filling, smoothing the tops with a spatula.
- Refrigerate for at least 2 hours, or until set.
