I love using rolled oats for their texture, but quick oats work if that’s what you have. Peanut butter is my go-to, but almond or cashew butter are excellent alternatives. For a vegan option, swap honey for maple syrup. These bars are forgiving, so feel free to experiment!
Instructions
- In a medium saucepan over low heat, combine the peanut butter, honey, and vanilla extract. Stir until smooth and well-blended, about 2-3 minutes.
- Remove the saucepan from heat and add the cocoa powder, mixing until fully integrated.
- Stir in the oats and a pinch of salt, ensuring they’re evenly coated with the chocolate mixture.
- Fold in the chocolate chips, allowing them to melt slightly in the warm mixture.
- Line an 8×8-inch baking dish with parchment paper and press the mixture firmly into the dish, smoothing the top with a spatula.
- Refrigerate for at least 2 hours, or until set. Once firm, cut into bars and enjoy!
