- 24 Oreo cookies

Feel free to substitute the heavy whipping cream with a dairy-free alternative if needed. The caramel sauce can be store-bought or homemade, depending on how much time you have. Trust me, it’s going to be delicious either way.
Instructions
- Start by crushing the Oreo cookies in a food processor until they resemble fine crumbs. Mix the crumbs with the melted butter to create the base.
- Line a muffin tin with paper liners and press about a tablespoon of the Oreo mixture into the bottom of each liner. Chill in the refrigerator while you prepare the filling.
- In a large bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, continuing to beat until combined.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Spoon the cheesecake mixture over the Oreo crusts, filling each cup to the top. Use a spatula to smooth out the tops.
- Drizzle caramel sauce over each cheesecake bite and sprinkle with a tiny pinch of salt for contrast.
- Chill the cheesecake bites in the refrigerator for at least 2 hours or until set.
