Ingredients
Scale
- 1 cup peanut butter
- 1/2 cup honey or maple syrup
- 2 cups rolled oats
- 1 cup chocolate chips
- 1 teaspoon vanilla extract
- A pinch of salt
Feel free to swap out the peanut butter for almond or sunflower seed butter if allergies are a concern. And don’t hesitate to play around with the add-ins—dried fruits, nuts, or even a sprinkle of cinnamon can make these treats uniquely yours.
Instructions
- In a medium saucepan over low heat, combine the peanut butter and honey. Stir gently until the mixture is smooth and well combined.
- Remove from heat and stir in the vanilla extract and salt.
- In a large mixing bowl, add the rolled oats and chocolate chips. Pour the warm peanut butter mixture over the oats and stir until everything is well coated.
- Using a spoon or your hands, form the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Chill in the refrigerator for at least 30 minutes to set before serving.
This recipe is as forgiving as it is delightful. If the mixture feels too sticky, add a few more oats. Too dry? A little more peanut butter will do the trick. Remember, perfection is overrated—this is all about feeding your people with love.
