- 8 oz cream cheese, softened
- 1 cup graham cracker crumbs
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1/4 cup cocoa powder (for dusting)

If you’re a bit low on graham cracker crumbs, feel free to substitute with crushed digestive biscuits or even chocolate wafer cookies. It’s all about using what you have and making it work beautifully.
Instructions
- In a large mixing bowl, combine the softened cream cheese and Nutella. Beat with an electric mixer on medium speed until smooth and well-blended, about 2 minutes.
- Add the graham cracker crumbs, vanilla extract, powdered sugar, and a pinch of salt. Mix until everything is fully incorporated and the mixture is thick and moldable.
- Using a small cookie scoop or your hands, form the mixture into small, bite-sized balls. Try to keep them uniform for even presentation.
- Place the formed truffle bites on a baking sheet lined with parchment paper and refrigerate for at least 1 hour. This helps them firm up nicely.
- Once chilled, roll each truffle bite in cocoa powder until fully coated. This gives them a decadent finish and a slight bitter contrast to the sweet filling.
A little tip from my kitchen to yours: if you find the mixture a bit too sticky to work with, popping it into the fridge for about 10 minutes can help make it easier to handle.
