- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced

- 4 cups chicken broth
- 2 cups heavy cream
- 12 ounces penne pasta
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: Red pepper flakes for extra heat
If you’re out of bell peppers, feel free to substitute with what you have—zucchini or mushrooms work wonderfully. And if heavy cream isn’t your thing, half-and-half can lighten the dish without sacrificing creaminess.
Instructions
- Heat olive oil in a large pot over medium-high heat. Add the diced chicken and Cajun seasoning, cooking until the chicken is browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the bell peppers and garlic. Sauté until the peppers are soft and the garlic is fragrant, about 3 minutes.
- Pour in the chicken broth and heavy cream, bringing the mixture to a simmer.
- Add the penne pasta, stirring to ensure it’s covered in liquid. Let it cook, stirring occasionally, until the pasta is al dente, about 10-12 minutes.
- Return the chicken to the pot, along with any juices. Stir in the Parmesan cheese until melted and the sauce is creamy.
- Season with salt, pepper, and red pepper flakes if desired. Garnish with fresh parsley before serving, if you like.
