- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 pound shrimp, peeled and deveined
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups chicken broth
- 1 1/2 cups long-grain rice
- 1 tablespoon Cajun seasoning (or adjust to taste)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
If you can’t find Cajun seasoning, a mix of paprika, cayenne, garlic powder, and onion powder works well too. And if you prefer turkey sausage or another protein, feel free to swap that in!
Instructions
Let’s dive into the kitchen and whip up this delightful jambalaya!
- Heat the olive oil in a large pot over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes.
- Remove the sausage from the pot and set aside. In the same pot, add the shrimp and cook just until they turn pink, about 2-3 minutes. Remove and set aside with the sausage.
- Add the onion, bell pepper, and celery to the pot. Sauté until the vegetables are soft, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.
- Pour in the diced tomatoes with their juices, chicken broth, and rice. Stir in the Cajun seasoning and thyme. Bring to a simmer, then reduce the heat to low.
- Cover the pot and let the jambalaya cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
- Return the sausage and shrimp to the pot. Stir gently to combine and cook for an additional 5 minutes to allow the flavors to meld.
- Season with salt and pepper to taste. Garnish with chopped parsley before serving.
