- 2 pounds of boneless, skinless chicken thighs

- 1 can (14.5 oz) of diced tomatoes
- 1 tablespoon of dried Italian seasoning

- 1/2 teaspoon of black pepper
- 2 cups of baby spinach
- 2 cups of uncooked pasta
- Optional: grated Parmesan cheese for serving
Feel free to swap chicken thighs for chicken breasts if you prefer, or even try a plant-based protein for a vegetarian twist. The beauty of one-pot meals lies in their flexibility!
Instructions
- Start by placing the chicken thighs at the bottom of your slow cooker. Top them with the sliced onions and minced garlic.
- Pour in the chicken broth and diced tomatoes, ensuring the chicken is mostly submerged in liquid.
- Sprinkle the Italian seasoning, salt, and pepper over the top. Give everything a gentle stir to combine the flavors.
- Set your slow cooker to low and let it cook for about 6-7 hours, or until the chicken is tender and easily shredded with a fork.
- Add the baby spinach and uncooked pasta to the slow cooker about 30 minutes before serving. Stir well and allow the pasta to cook through.
- Once the pasta is tender, give the dish a final stir, taste for seasoning, and adjust if necessary.
- Serve hot, topped with grated Parmesan cheese if desired.
