Ingredients
Gathering your ingredients is half the fun! Here’s what you’ll need:
- 24 Oreo cookies, crushed
- 5 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup caramel sauce
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
If you’re out of caramel sauce, don’t fret! You can make a quick version by melting some caramel candies with a splash of milk. It’s these little improvisations, much like my mom’s magic with canned tomatoes, that make cooking at home so rewarding.
Instructions
Ready to get started? Follow these simple steps:
- Preheat your oven to 325°F (165°C) and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, mix the crushed Oreos with the melted butter until combined. Press the mixture into the bottom of the prepared pan to form a crust.
- In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
- Stir in the flour and salt, then pour the cream cheese mixture over the Oreo crust, spreading it evenly.
- Drizzle the caramel sauce over the top and use a knife to swirl it gently into the cheesecake mixture.
- Bake for 30-35 minutes or until the center is set. Allow to cool at room temperature for an hour, then refrigerate for at least 2 hours before cutting into bars.
One of my favorite tips? Make sure to save a little extra caramel for drizzling on top before serving. It’s the kind of little touch that reminds me of the extra stories my dad would share over a pot of lentils—unexpected and delightful.
