- Preheat your oven to 325°F and line a muffin tin with paper liners.
- In a medium bowl, mix the crushed Oreos with the melted butter until the crumbs are well coated.
- Divide the Oreo mixture among the muffin cups, pressing down to form a crust.
- In a separate bowl, beat the cream cheese, sugar, and vanilla extract together until smooth and creamy.
- Beat in the egg until just combined—overmixing can cause cracks!
- Spoon the cream cheese mixture over the Oreo crusts, filling each cup about two-thirds full.
- Drizzle a teaspoon of caramel sauce over each cheesecake bite and swirl with a toothpick for a marbled effect.
- Bake for 15-18 minutes or until the edges are set but the center is still slightly jiggly.
