- 1 pound ground beef (or ground turkey for a lighter option)
- 1 packet taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup salsa (mild or spicy, depending on your taste)
- 1 cup shredded cheddar cheese (or Monterey Jack for a twist)
- 8 taco shells
- 1 cup shredded lettuce
- 1 tomato, diced
- 1/2 cup sour cream
- 1/4 cup chopped cilantro (optional, for garnish)
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease a baking dish.
- In a large skillet over medium heat, cook the ground beef until browned, about 6-8 minutes. Drain any excess fat.
- Stir in the taco seasoning and a splash of water, and let it simmer for 2 minutes to blend the flavors.
- Add the black beans and salsa to the skillet. Mix well and cook for another 3-4 minutes until everything is heated through.
- Place the taco shells on the prepared baking sheet or dish. Spoon the meat mixture evenly into each shell.
- Sprinkle the shredded cheese generously over the top of the tacos.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let them cool slightly before serving. Top with shredded lettuce, diced tomatoes, and a dollop of sour cream. Garnish with cilantro if desired.
