- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar as a substitute)
- 1 large egg
- 2 tablespoons melted butter
- 8 breakfast sausage links, cooked
- 8 wooden skewers
- Maple syrup for serving
You can swap out the buttermilk for regular milk and a splash of vinegar if you’re in a pinch—something I’ve done countless times when I realized too late that the buttermilk was all gone!
Instructions
Once you have everything ready, it’s time to bring these Pancake Sausage Sticks to life. Here’s how:
- Preheat your griddle or a large frying pan over medium heat. Grease lightly with butter or cooking spray.
- In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly lumpy, and that’s okay!
- Insert a wooden skewer into each cooked sausage link, leaving enough skewer exposed for a handle.
- Dip each sausage into the pancake batter, ensuring it’s well-coated.
- Place the battered sausage on the griddle and cook for about 2-3 minutes per side, until the pancake is golden brown and cooked through.
- Remove from the griddle and let cool slightly before serving with maple syrup.
