Parmesan Chicken Meatloaf: A Comfort Food Classic with a Gourmet Twist

Learn how to make delicious Parmesan Chicken Meatloaf. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 pound ground chicken
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (use panko for extra crunch)
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup marinara sauce
  • 1/4 cup chopped fresh parsley (optional for garnish)

Feel free to substitute ground turkey if that’s what you have on hand, and if you’re out of breadcrumbs, crushed crackers work wonders too. Remember, flexibility is key in my kitchen, and it’s all about using what you have while keeping the spirit of the dish intact.

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, milk, egg, garlic, oregano, salt, and pepper. Mix until just combined, being careful not to overwork the meat.
  3. Transfer the mixture onto the prepared baking sheet and shape it into a loaf, about 8 inches long and 4 inches wide.
  4. Spread the marinara sauce evenly over the top of the loaf. This not only adds flavor but helps keep the meatloaf moist.
  5. Bake in the preheated oven for 35-40 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Allow the meatloaf to rest for 10 minutes before slicing. This helps the juices redistribute, ensuring each slice is succulent and flavorful.

One of my personal tips: if you have a few extra minutes, let the kids help with spreading the marinara. It’s a simple task that gives them a sense of contribution, and I cherish those messy, flour-dusted memories.
