- 4 boneless pork chops
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or seasoned)
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs (like oregano or thyme)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 2 tablespoons olive oil
If you’re out of breadcrumbs, crushed crackers or cornflakes make a fantastic substitute. And if you’re feeling adventurous, try using smoked paprika instead of Italian herbs for a little kick.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a shallow bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, Italian herbs, salt, and black pepper.
- In another bowl, whisk the eggs until well beaten.
- Dip each pork chop into the egg mixture, ensuring it’s fully coated, then press it into the Parmesan mixture, patting it down so the coating sticks well.
- Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear for about 2-3 minutes per side, until golden brown.
- Transfer the seared pork chops to the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let the pork chops rest for a few minutes before serving. This helps lock in the juices, making each bite tender and delicious.
Remember, cooking is about feeling, not just following. If you find the crust isn’t as golden as you’d like, a minute or two under the broiler will do wonders!
