Ingredients
Scale
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (Panko works great for extra crunch)
- 2 tablespoons dried Italian herbs
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1/4 cup melted butter
And, if you’re like my mom and love a bit of improvisation, try adding a pinch of red pepper flakes for that extra kick!
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a shallow dish, mix together the Parmesan cheese, breadcrumbs, Italian herbs, garlic powder, salt, and pepper.
- Set up your dredging station with three dishes: one for flour, one for beaten eggs, and one for the Parmesan breadcrumb mixture.
- Dip each chicken piece into the flour, shaking off the excess. Then, dip it into the egg, followed by the Parmesan breadcrumb mixture, ensuring it’s well-coated.
- Place the coated chicken pieces onto the prepared baking sheet. Drizzle melted butter over the top of the chicken bites for extra flavor and crispiness.
- Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through, flipping halfway for even browning.
- Once done, remove from the oven and let them cool slightly before serving.
Trust me, the aroma that fills your kitchen will have everyone hovering around, eager to dig in!
