- 1 pound thinly sliced beef (ribeye or sirloin works best)
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 8 flour tortillas
- 2 cups shredded provolone cheese (or substitute with mozzarella)
- Salt and pepper to taste
- Optional: 1/2 teaspoon garlic powder for extra flavor
Instructions
Follow these simple steps to create a meal that’s sure to be a hit with your family:
- Heat the olive oil in a large skillet over medium-high heat. Add the thinly sliced beef and season with salt, pepper, and garlic powder if using. Cook until the beef is browned and cooked through, about 5-7 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the sliced onion and bell pepper. Sauté until the vegetables are softened and slightly caramelized, about 5 minutes. Remove from the skillet and set aside.
- Lay a tortilla flat on a clean surface. Sprinkle a layer of shredded cheese on one half of the tortilla. Top with a portion of the cooked beef, onions, and peppers. Add another layer of cheese on top of the toppings.
- Fold the tortilla in half and press gently to secure. Repeat with the remaining tortillas and fillings.
- Heat a non-stick skillet or griddle over medium heat. Place the quesadilla in the skillet and cook until the tortilla is golden brown and the cheese is melted, about 3-4 minutes per side. Flip carefully using a spatula.
