Ingredients
Scale
- 1 cup crushed graham crackers
- 1/2 cup melted butter
- 1/4 cup granulated sugar
- 8 oz cream cheese, softened
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
Feel free to substitute graham crackers with digestive biscuits or add a pinch of ginger for an extra kick. Cooking at home is all about making it work with what you have—my mom taught me that creativity in the kitchen is as valuable as any ingredient.
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, mix the crushed graham crackers, melted butter, and granulated sugar until combined. Press this mixture firmly into the prepared pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Add in the pumpkin puree and brown sugar, mixing until well incorporated.
- Stir in the eggs one at a time, followed by the vanilla extract, cinnamon, nutmeg, and salt. Continue mixing until the batter is smooth and creamy.
- Pour the cheesecake batter over the graham cracker crust, spreading it evenly.
- Sprinkle the chocolate chips over the top of the cheesecake mixture.
- Bake in the preheated oven for 35-40 minutes, or until the center is set and the edges are slightly golden.
- Allow to cool completely in the pan before slicing into bars. Remember, patience is a virtue here—rushing this step can lead to a gooey mess, though trust me, it’s delicious either way!
