Ingredients
Scale
- 1 cup cottage cheese
- 1/2 cup pumpkin puree
- 1/4 cup honey or maple syrup (your choice!)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 cup whipped cream (optional, for topping)
- A pinch of salt
Feel free to substitute honey with agave syrup if you prefer, or add a dash of cloves for an extra spice kick. These ingredients are likely already in your pantry, making this recipe as convenient as it is delicious.
Instructions
- In a blender or food processor, combine the cottage cheese, pumpkin puree, honey, vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt.
- Blend until smooth and creamy. This should take about 2-3 minutes. If you like your mousse extra smooth, blend a bit longer.
- Taste and adjust the sweetness or spices according to your preference. I often find myself adding a touch more cinnamon because my kids love it.
- Spoon the mousse into serving bowls or glasses.
- If you’re feeling fancy, top each serving with a dollop of whipped cream. Trust me, it’s worth the extra step.
- Refrigerate for at least 30 minutes before serving to let the flavors meld together.
Remember, it’s okay if things get a little messy in the kitchen. That’s where the magic happens!
