- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and cube the sweet potatoes into bite-sized pieces.
- Slice the tops off the garlic bulbs to expose the cloves, and drizzle a little olive oil on top. Wrap each bulb in aluminum foil.
- Place the sweet potatoes on the prepared baking sheet, drizzle with olive oil, and sprinkle with salt, pepper, and smoked paprika.
- Add the wrapped garlic bulbs to the baking sheet alongside the sweet potatoes.
