- 1 French baguette, sliced into 1/2-inch thick rounds
- 5 ripe tomatoes, diced
- 1 bulb of garlic
- 1/4 cup olive oil, plus more for drizzling
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
- Optional: 1/4 cup crumbled feta cheese or grated Parmesan
Feel free to swap out the French baguette for any crusty bread you have on hand, and if you’re out of fresh basil, dried basil will do in a pinch—just use a little less!
Instructions
- Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft and fragrant.
- Meanwhile, place your sliced baguette on a baking sheet. Brush each slice with olive oil and toast in the oven for about 10 minutes, or until golden brown. Keep an eye on them to avoid burning.
- In a medium bowl, combine the diced tomatoes, chopped basil, balsamic vinegar, and a pinch of salt and pepper. Mix well and let the flavors meld together while the garlic roasts.
- Once the garlic is done, let it cool slightly. Squeeze the roasted cloves out of their skins into the tomato mixture, mashing them gently with a fork to distribute the roasted goodness evenly.
- Spoon the tomato mixture over each toasted baguette slice, adding a drizzle of olive oil for extra flavor. If you’re using cheese, sprinkle it on top now.
- Serve immediately and enjoy the fresh, garlicky burst of flavor that this bruschetta delivers!
