- 1 head of garlic
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese

- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Pro tip: If you’re out of ricotta, cottage cheese makes a great substitute with a similar creamy texture. And if you’d like to add a bit more green, throw in some fresh spinach for a nutritious boost.
Instructions
- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and fragrant.
- While the garlic roasts, roll out your pizza dough on a floured surface to your desired thickness. Transfer it to a parchment-lined baking sheet or pizza stone.
- In a small bowl, squeeze out the roasted garlic cloves and mash them with a fork. Mix in the ricotta cheese, a tablespoon of olive oil, salt, and pepper until smooth.
- Spread the garlic-ricotta mixture evenly over the pizza dough, leaving a small border for the crust. Sprinkle the mozzarella and Parmesan cheeses over the top.
- Sprinkle with oregano and red pepper flakes if using. Bake in the oven for 12-15 minutes, or until the cheese is bubbly and the crust is golden brown.
- Remove from the oven, let it cool for a couple of minutes, then garnish with fresh basil leaves. Slice and serve immediately.
