Savor the Flavor: Roasted Red Pepper Spinach and Mozzarella Stuffed Chicken Delight

Learn how to make delicious Roasted Red Pepper Spinach And Mozzarella Stuffed Chicken. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, sliced
  • 2 cups fresh spinach leaves
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar (optional for a tangy twist)

Feel free to swap mozzarella for provolone if you’re craving a different cheesy experience, or add a sprinkle of crushed red pepper for a subtle kick.

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, carefully make a pocket in each chicken breast by slicing it horizontally, being sure not to cut all the way through.
  3. In a skillet over medium heat, add the olive oil and sauté the minced garlic until fragrant, about 1 minute.
  4. Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  5. In a bowl, combine the cooked spinach, roasted red peppers, mozzarella cheese, and oregano. Mix well.
  6. Stuff each chicken breast with the spinach mixture, securing with toothpicks if necessary.
  7. Season the outside of the chicken with salt, pepper, and a drizzle of balsamic vinegar for extra depth of flavor.
  8. Place the stuffed chicken breasts on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  10. Let rest for a few minutes before slicing and serving. Enjoy the melty, savory goodness!
