- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, sliced
- 2 cups fresh spinach leaves
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 tablespoon balsamic vinegar (optional for a tangy twist)
Feel free to swap mozzarella for provolone if you’re craving a different cheesy experience, or add a sprinkle of crushed red pepper for a subtle kick.
Instructions
- Preheat your oven to 375°F (190°C).
- Using a sharp knife, carefully make a pocket in each chicken breast by slicing it horizontally, being sure not to cut all the way through.
- In a skillet over medium heat, add the olive oil and sauté the minced garlic until fragrant, about 1 minute.
- Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the cooked spinach, roasted red peppers, mozzarella cheese, and oregano. Mix well.
- Stuff each chicken breast with the spinach mixture, securing with toothpicks if necessary.
- Season the outside of the chicken with salt, pepper, and a drizzle of balsamic vinegar for extra depth of flavor.
- Place the stuffed chicken breasts on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
