- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (or substitute with rosemary for a different twist)
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to make cleanup a breeze.
- In a large bowl, toss the sweet potato cubes with olive oil, making sure each piece is well-coated. This is the secret to achieving that perfect caramelization.
- Add the minced garlic, Parmesan cheese, salt, black pepper, and thyme. Mix everything thoroughly until the sweet potatoes are evenly seasoned.
- Spread the sweet potatoes out in a single layer on the prepared baking sheet. Overcrowding will steam them instead of roasting, so give them some space.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the edges are golden brown and crispy. This is where the magic happens!
- Once roasted to perfection, remove from the oven and let them cool slightly. Garnish with fresh parsley before serving for a pop of color and flavor.
