Ingredients
Scale
- 1 pound cherry tomatoes, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional, for a little kick)
- 8 ounces burrata cheese
- Fresh basil leaves
- Balsamic glaze for drizzling
- Slices of crusty bread, for serving
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the halved cherry tomatoes with olive oil, salt, pepper, oregano, and red pepper flakes. Spread them in a single layer on the prepared baking sheet.
- Roast the tomatoes in the preheated oven for about 20 minutes, or until they are blistered and juicy. The aroma will remind you of those cozy family kitchens where love was the main ingredient.
- While the tomatoes are roasting, arrange the burrata cheese on a serving platter. Gently tear it open to reveal the creamy center.
- Once the tomatoes are done, let them cool slightly before arranging them around the burrata. This is when the dish truly comes together, akin to those evenings when my mom would plate up a seemingly simple dish that dazzled us all.
- Scatter fresh basil leaves over the top and drizzle with balsamic glaze. Serve with slices of crusty bread to mop up all the delicious juices.
