- Preheat your oven to 375°F (190°C). In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Season the chicken thighs generously with salt, pepper, and garlic powder.
- Add the chicken, skin-side down, to the skillet. Sear for about 5 minutes until the skin is golden brown and crispy. Flip and sear the other side for an additional 3 minutes.
- Remove the chicken temporarily and set aside. In the same skillet, add the onion slices and cook until they begin to soften, about 3 minutes.
- Stir in the apple cider, Dijon mustard, honey, and rosemary. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return the chicken to the skillet, skin-side up, and add the apple slices around the chicken.
- Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
