If you’re out of graham crackers, feel free to substitute with digestive biscuits. No white chocolate? Dark chocolate is a lovely twist, adding a richer flavor profile that pairs beautifully with caramel.
Instructions
- In a large mixing bowl, combine the crushed graham crackers, softened cream cheese, caramel sauce, vanilla extract, and sea salt. Mix until smooth and well combined, resembling the consistency of a thick dough.
- Scoop tablespoon-sized portions of the mixture and roll them into balls using your hands. Place them on a baking sheet lined with parchment paper. This is a great step to involve the kids in—it’s like making edible playdough!
- Freeze the truffle balls for at least 30 minutes to allow them to firm up.
- While the truffles chill, melt the white chocolate chips and coconut oil together in a microwave-safe bowl in 30-second increments, stirring between each, until smooth.
- Remove the truffles from the freezer and dip each one into the melted chocolate, using a fork to ensure they’re fully covered. Place them back on the parchment paper.
- Drizzle with extra caramel sauce and sprinkle with a pinch of sea salt before the chocolate sets. This step is where the magic happens.
- Return the truffles to the freezer for another 15 minutes to set completely.
