- For the Meatballs:
- 1 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the Sweet Potato Mash:
- 3 large sweet potatoes, peeled and cubed
- 1/4 cup milk (use almond milk for a dairy-free option)
- 2 tablespoons butter (or coconut oil for dairy-free)
- 1/2 teaspoon salt
- For the Bourbon-Maple Drizzle:
- 1/4 cup maple syrup
- 2 tablespoons bourbon
- 1 tablespoon butter
- 1/4 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- In a large bowl, combine ground pork, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper. Mix well until everything is fully incorporated.
- Form the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the meatballs are golden brown and cooked through.
- While meatballs are baking, prepare the sweet potato mash. Boil sweet potato cubes in a large pot of salted water until tender, about 15 minutes.
- Drain the sweet potatoes and return them to the pot. Add milk, butter, and salt. Mash until smooth and creamy.
- For the bourbon-maple drizzle, combine maple syrup, bourbon, butter, and cinnamon in a small saucepan over medium heat. Stir continuously until butter is melted and the mixture is smooth.
- To serve, spoon sweet potato mash onto plates, top with meatballs, and drizzle generously with the bourbon-maple sauce.
