  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 3 ripe avocados, diced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • Juice of 2 limes
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add shrimp, garlic powder, paprika, salt, and pepper. Cook shrimp until pink and opaque, about 2-3 minutes per side. Remove from heat and let it cool slightly.
  2. In a large bowl, combine diced avocados, halved cherry tomatoes, and sliced red onions.
  3. Add the cooked shrimp to the bowl, and drizzle with lime juice. Toss gently to combine, being careful not to mash the avocados.
  4. Sprinkle chopped cilantro over the top, and give the salad one last gentle toss.
  5. Serve immediately, or refrigerate for up to an hour to let the flavors meld together.
