Ingredients
Scale
To whip up this delightful dish, gather these ingredients:
- 1 pound of shrimp, peeled and deveined
- 1 cup of long-grain white rice
- 4 tablespoons of unsalted butter
- 4 cloves of garlic, minced
- 2 cups of chicken broth
- 1 teaspoon of paprika
- Salt and pepper to taste
- Juice of 1 lemon
- 2 tablespoons of chopped parsley
- Optional: 1/4 teaspoon of red pepper flakes for a bit of heat
If you don’t have chicken broth, you can substitute it with vegetable broth or water with a bouillon cube. For a richer flavor, try adding a splash of white wine while cooking the shrimp.
Instructions
Follow these simple steps to prepare your Shrimp Garlic Butter Rice:
- Start by rinsing the rice under cold water until the water runs clear, then set it aside.
- In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Add the shrimp to the skillet, season with paprika, salt, and pepper. Cook until the shrimp turns pink, about 3-4 minutes. Remove the shrimp and set it aside.
- In the same skillet, add the remaining butter and let it melt. Stir in the rinsed rice and cook for 1 minute, allowing it to absorb the flavors.
- Pour in the chicken broth and bring it to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is cooked and fluffy.
- Return the shrimp to the skillet, gently folding it into the rice. Drizzle with lemon juice and sprinkle with chopped parsley.
- For a little kick, add red pepper flakes before serving.
Cooking tip: Don’t rush the simmering process. Letting the rice cook slowly ensures it absorbs all the buttery goodness.
