- 12 oz of pasta (linguine or fettuccine work great)
- 1 lb of shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup chicken broth (or white wine for a bit more flavor)
- 1 tablespoon lemon juice
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
If you’re in a pinch, you can substitute the shrimp with chicken or even mushrooms for a veg-friendly version. And, if you’re missing Parmesan, any hard cheese you have on hand can work wonders.
Instructions
- Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
- In the same pot, heat olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
- Add minced garlic to the pot and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and lemon juice, scraping up any bits from the bottom of the pot. Allow to simmer for 2 minutes.
- Add heavy cream and Italian seasoning to the pot, stirring to combine. Let the mixture come to a gentle simmer.
- Gradually add the Parmesan cheese, stirring until the sauce is smooth and creamy.
- Return the shrimp to the pot, along with the cooked pasta, and toss everything together until well coated in the sauce. Adjust seasoning with salt and pepper if needed.
- Garnish with fresh parsley and serve immediately.
