  1. Start by cooking the jasmine rice according to the package instructions. Once done, set it aside to cool slightly.
  2. In a large pan, heat the olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes. Remove the shrimp from the pan and set aside.
  3. In the same pan, add the sesame oil. Stir in the garlic and onions, cooking until the onions become translucent, about 2 minutes.
  4. Add the red bell pepper and pineapple chunks to the onion mix, cooking for an additional 3 minutes until the peppers are slightly tender.
  5. Stir in the cooked rice, soy sauce, and frozen peas, mixing well to combine all the flavors. Cook for another 5 minutes, stirring occasionally.
  6. Return the shrimp to the pan, tossing to ensure everything is well coated and heated through, about 2 minutes.
