- 1 pound baby potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup pizza sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- Fresh basil leaves, for garnish
If you don’t have baby potatoes, feel free to substitute with regular potatoes cut into smaller pieces. No mozzarella? No problem! Cheddar or a mix of cheeses can work just as well.
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Boil the baby potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and let them cool slightly.
- Place the potatoes on the prepared baking sheet and use a potato masher or the bottom of a glass to gently smash them until they are about 1/2 inch thick.
- Drizzle the smashed potatoes with olive oil, then sprinkle with garlic powder, paprika, salt, and pepper.
- Bake in the preheated oven for 25 minutes, or until the potatoes are golden and crispy.
- Remove the potatoes from the oven and spread the pizza sauce evenly over them. Sprinkle the mozzarella and Parmesan cheeses on top.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
- Sprinkle red pepper flakes over the pizza, if using, and garnish with fresh basil leaves before serving.
