- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup melted butter
- 2 large eggs
- 1/4 cup honey
- 1/4 cup unsalted butter, melted for brushing
- Optional: 1/2 cup shredded cheddar cheese for a cheesy twist
Instructions
Follow these steps, and you’ll have a batch of warm poppers ready to enjoy in no time:
- Preheat your oven to 400°F. Grease a mini muffin tin or line with paper liners.
- In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, combine the buttermilk, melted butter, eggs, and honey. Mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix.
- If you’re using cheese, gently fold it into the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
