Ingredients
Scale
Let’s talk about the ingredients that will bring this cobbler to life. You might already have most of these in your kitchen. Here’s what you’ll need:
- 6 cups sliced fresh peaches (or canned if you’re in a pinch)
- 1 cup granulated sugar, divided
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk (whole or 2% for a richer flavor)
- 1 teaspoon vanilla extract
If you’re missing fresh peaches, canned peaches can swoop in to save the day. Just remember to adjust the sugar slightly since canned peaches can be sweeter.
Instructions
Let’s walk through the steps to bring this cobbler from your kitchen to your table:
- Preheat your oven to 375°F (190°C). This is the perfect time to sip on a cup of coffee while the oven heats up, just like I do on lazy weekend mornings.
- In a large bowl, combine the sliced peaches, 1/2 cup of granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Stir in the cornstarch until the peaches are well coated. Set aside and allow the flavors to meld.
- In another bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract until you have a smooth batter.
- Pour the peach mixture into a 9×13-inch baking dish. Spread the batter evenly over the peaches. It doesn’t have to be perfect—it’s homey and rustic, just like cooking with my dad.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the peach juices are bubbling around the edges.
- Let it cool for a few minutes before serving. The waiting is the hardest part, but trust me, it’s worth it when you see those smiles around the table.
