  • 350g (12 oz) of fettuccine pasta
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

If you’re missing anything, don’t worry! You can easily swap the fettuccine for any pasta you have on hand, and if you’re not a fan of spice, dial back the cayenne pepper. This dish is as flexible as my mom’s magic with a can of tomatoes!

Instructions

Let’s dive into the cooking process. Trust me, it’s as easy as pie (or pasta, in this case):

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with taco seasoning, then add them to the skillet. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Pour in the heavy cream and milk, stirring to combine. Bring to a gentle simmer.
  5. Reduce heat to low and gradually stir in the Parmesan cheese, smoked paprika, and cayenne pepper. Season with salt and pepper to taste. Stir until the cheese is melted and the sauce is smooth.
  6. Return the cooked chicken to the skillet, along with the cooked pasta. Toss everything together until the pasta and chicken are well coated in the sauce.
  7. Finish with a squeeze of lime juice and sprinkle with fresh cilantro before serving.
