- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 pound asparagus, trimmed
- 1 cup shredded cheddar cheese
- 1 1/2 pounds baby potatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon fresh parsley, chopped
- Juice of 1 lemon
Instructions
Let’s dive into the process, step by step, to ensure your kitchen adventure is as smooth as possible.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix together the paprika, cumin, garlic powder, salt, and pepper. Rub this spice mix evenly over the salmon fillets.
- Place the salmon on one side of the prepared baking sheet. Drizzle with olive oil and set aside.
- In a separate bowl, toss the asparagus with 1 tablespoon of olive oil, salt, and pepper. Arrange the asparagus next to the salmon on the baking sheet. Sprinkle the shredded cheddar cheese over the asparagus.
- In a large bowl, combine the baby potatoes with minced garlic, butter, and a pinch of salt and pepper. Spread these out on the opposite side of the baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the salmon flakes easily with a fork and the potatoes are tender.
- Once out of the oven, squeeze lemon juice over the salmon and sprinkle the parsley over everything for a fresh finish.
